Healthy Everyday Waffles

Yesterday my dear friend Shauna’s daughter Amanda was baptized and it was a very special day for her and everyone who attended. Lucky for us we are such good friends that they invited us to come over afterwards and have waffles, strawberries, and ice cream (my kind of breakfast).

These were some of the best tasting waffles I have had in ages…. Well, I couldn’t resist converting her recipe into a healthier version. Although I have not tested them out on the neighborhood yet, my family loved them. So, I thought you might love them as well. Here is my stolen and now healthier version of Shauna’s Waffles

Shauna’s Stolen and now Healthier Everyday Waffles

2 large eggs (separated)

¾ cup all purpose flour

¾ cup whole wheat pastry flour

1 heaping teaspoon wheat germ (optional)

1 tablespoon baking powder

½ teaspoon salt

3 tablespoons sugar

1 ½ cups low fat milk

¼ cup low fat vanilla yogurt

1/3 cup pure olive oil

1 teaspoon pure vanilla extract

 

Place egg whites in a mixing bowl and beat until a stiff meringue is formed (stiff peaks) and set aside. Place all dry ingredients in another large bowl and blend or sift until combined. In yet another mixing bowl (medium size this time), mix moist ingredients until well blended. Pour wet ingredients into bowl with dry ingredients and mix until well blended. Gently fold in egg whites until blended, leaving some of the meringue in clumps.

 

Heat your waffle iron and enjoy these airy and delicious waffles. Serve with strawberries and light whipped cream.
